Repositori BKPKProfil Mikroorganisme pada Makanan Pendamping Air Susu Ibu (MP-ASI) TradisionalErwinAffandi,authorLatar belakang: Anjuran Badan Kesehatan Dunia (WHO) memberikan Air Susu Ibu (ASI) secara maksimal, tetapi sampai usia tertentu ASI tidak dapat lagi memenuhi seluruh kebutuhan, karena bayi memerlukan makanan tambahan sebagai pendamping ASI. Makanan Pendamping ASI (MP ASI) tradisional /lokal, merupakan sumber gizi masyarakat yang umumnya dikonsumsi oleh bayi dan balita setempat, yang perlu diperhatikan adalah kandungan gizi, vitamin dan mineral, serta higinitas proses pembuatannya. Penelitian terdahulu pada MP-ASI tradisional di 15 propinsi telah dilakukan analisa dan perbaikan zat gizi utama (Rossi dan Mien), kemudian Affandi, dkk., melengkapi MP-ASI tersebut dengan analisa vitamin dan mineral. Untuk melengkapi mutu dan higinitas MP-ASI tersebut perlu dianalisa mikrobiologis sebagai salah satu persyarakatan bahan pangan. Tujuan penelitian; Untuk mempelajari mikroorganisme pencemar pada MP-ASI tradisional berdasarkan jumlah, macam dan faktor lain. Metode penelitian: Jumlah sampel yang dianalisa sebanyak 10, diambil dari daerah sekitar Bogor. Macam analisa yang dilakukan : total bakteri (metode tuang); total yeast dan mold (metode tuang); coliform dan E. coli (most probable number); Salmonella shigella (selective media); juga Staphyllococcus aureus, Bacillus cereus, dan Yersinia enterolitica (selective media). Hasil penelitian menunjukkan bahwa total bakteri berkisar antara 4,1 x 103 - 1,5 x 105; total yeast antara 3,0 x 102 - 4,1 x 104; total mold antara 0 - 3,2 x 102; coliform 0 - 4,6 x 101; Staphyllococcus aureus antara 0 - 4,2 x 101, Bacillus cereus 2,8 x 102, sedangkan Salmonella-shigella, eschericia coli dan yersenia enterolitica tidak terdeteksi. Bila kita bandingkan dengan standar MP-ASI (tentative), maka dari 10 sampel yang dianalisa ditemukan total bakteri yang melampaui batas standar ada 6 sampel; total yeast semua sampel; total mold 4 sampel; coliform 2 sampel; sedangkan untuk bakteri 4 sampel mengandung S. Aureus; dan 6 sampel mengandung B. aureus, untuk Salmonella shigella, E. coli dan Y. enterolitica tidak terdeteksi hal ini sesuai dengan standar.QU 1-54 Reference Works.
