The activities and  stability of phytase enzyme were observed under influence of various incubation temperature (27 degree celcius, 37 degree celcius and 55 degree celcius), and incubation time (1 hour, 2 hour and 3 hour) of the mung beans (Phaseolus radiatus L) in germinating for 1 to 5 days.  The results showed  that activities of phytase enzyme at the same temperature and incubation time are the same in Mung Beans seed germinating for 1 to 5 days.
